Learn To Make Midnight In Hawaii, An Extra-Tropically Airmail Cocktail

In this episode of A.V. Cocktail Club, bartender Laura Kelton of Sportsman's Club in Chicago reimagines the classic Airmail cocktail. This is a cocktail typically made with rum, honey, lime juice, and sparkling wine. To make it more evocative of the tropics—and more of what Kelton calls "a great celebration, honeymoon drink"—she enlists banana liqueur and bitters.

The pairing of the banana and ancho chili liqueurs makes for an especially intriguing combination to this fruity but sophisticated drink, like a beach vacation at a six-star resort.

Midnight In Hawaii

1 oz rum.5 oz Ancho Reyes.5 oz honey syrup.5 oz lime juice.25 oz Giffard banana liqueur1 dash angostura bittersA splash of sparkling wine

Add rum, Ancho Reyes, honey syrup, lime juice, angostura and banana liqueur into shaker tin with ice. Shake vigorously. Pour into tall glass. Top with a splash of sparkling wine. Garnish with mint.
