If you’re looking for a new way to dress up canned tuna, consider adding it to a quesadilla for a simple, hot lunch that cooks quickly and is extensively customizable.
First, make tuna salad using a can of tuna, mayo to bind it, and anything else you want for flavor. You can also mix up the ingredients for Tex-Mex or Mediterranean dishes.
For a Tex-Mex quesadilla, mix the mayo with sour cream, then fold in peppers, cilantro, and roasted corn. For Mediterranean vibes, dress the tuna with olive oil and lemon juice.
Warm a tortilla in a skillet, sprinkle one half with cheese, and spoon the filling over it. Add more cheese on top, fold it closed, and cook until the cheese is melted.
