IHOP buttermilk pancakes

Ingredients
  • 1 ¼ cups all-purpose flour
  • 1 egg
  • 1 ½ cups buttermilk
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking soda
  • ½ teaspoon baking powder
  • ¼ cup vegetable oil
  • ½ teaspoon salt
Directions
  1. Combine wet ingredients in a bowl (including egg), and mix with a whisk just to meld the ingredients.
  2. In a separate bowl, combine dry ingredients and whisk to get all the dry stuff evenly distributed.
  3. Pour the dry ingredients into the wet ingredients, mix with a whisk to combine.
  4. Using a ⅓ measuring cup, ladle mix onto a pan of flat top sprayed with non-stick cooking spray set at 5-6 on your low-to-10 stove top setting (or 350-375 degrees)
  5. Cook for 3 minutes a side max. After two minutes you should see the sides curling up — that means they're done on that side.
  6. If cooking one at at time, remove to a plate and cover with a tea towel.
  7. Serve with a dollop of butter and syrup, and enjoy!
